My Mom’s Beer Muffins

These muffins aren’t “health food,” but there’s something healing about what’s inherited and comes from love. I also like finding a recipe that’s vegan and still “normal-sounding” to people who are put off by ingredients you have to go to a natural foods store to find. This one is supermarket all the way — and these muffins are delicious and foolproof. They long ago replaced biscuits on our Thanksgiving table.
3 cups Bisquick
12 oz. beer
1 Tbls. granulated sugar
1/4 tsp. brown sugar
Preheat over to 350 degrees F. Mix Bisquick and beer till smooth. Place in greased muffin tins. Mix sugars together and sprinkle on top. Bake 15 minutes.
