Oil or broth to sauté
1/2 cup chopped onion
2 cloves garlic
1 bunch kale (steamed)
1 sixteen-ounce can chickpeas
4 cups vegetable broth
2 tomatoes (diced)
2 teaspoons curry powder
2 tablespoons lemon juice
Garnish with cilantro
Sauté onion and garlic in oil or broth (coconut oil adds a great flavor, but broth can be substituted for low-fat diets); place onion, garlic, and all remaining ingredients except the tomatoes in a blender and blend until smooth. Pour into a saucepan, add tomatoes, and simmer for about 10 minutes to blend flavors.
