Chef John’s Almost Rum Balls

I was just at the Regency Health Spa in Hallandale Beach, Florida, for the annual conference of the National Health Association and Chef John Nowakowski (he contributed “Chef John’s Spa Smoothie” to Main Street Vegan) made the yummiest, super-easy “Almost Rum Balls” in a food prep demo that I wanted to share with you. (Hint: it says 1 Tbls. vanilla extract, but in the demo, Chef John just poured — I’ll bet 2 Tbls. at least).
Almost Rum Balls

Yield: approximately 2 dozen
You will find this holiday dessert can be a wonderful ‘petit four’ throughout the year.1 1/4 cups whole almonds (slices or slivers may be substituted)
1/2 cup raisins or pitted Medjoul dates (he used raisins in the demo and the result was divine!)
1 Tbls. carob powder
1 Tbls. vanilla extract
2 Tbls. brown rice syrup (or date syrup or maple syrup)
Carob powder, coconut flakes, or crushed nuts for coating

1. In a food processor, coarsely grind the almonds, then add and process the remaining ingredients.

2. Form the mixture into 1-inch balls ,and roll with the palms of your hands. If you use your fingers too much, the ball will not be uniformly round.

3. Coat the balls with carob powder, coconut flakes, or crushed nuts. (Take these to a party and wow everybody!)
